Now I don't know if I would call these "wings", but they definitely make delicious finger food! And they are super easy to do in just a few steps.

How to make buffalo cauliflower

  1. Mix the flour, almond milk and spices to form a dough.
  2. Stir in cauliflower, brush all sides with it.
  3. Spread the cauliflower on the baking sheet and bake until crispy.
  4. Mix the hot sauce, oil and syrup in a bowl. Add cauliflower to the sauce.
  5. Return the cauliflower to the pan and bake for a few more minutes until a glaze forms.

Tips

Prepare the pan for baking

I recommend using a silicone baking mat, aluminum foil, or parchment to line your baking sheet. Each of these options gives you a straightforward cleanup. You can just throw the foil away when you're done. But of course the baking mats are reusable and a little more environmentally friendly.

Adjust the Seasoning factor

You can make these baked cauliflower bites as hot or mild as you like. Just choose a milder or spicier hot sauce, and remember that the maple syrup tames the seasoning too!

Keep parts the same size

Try cutting your cauliflower florets into evenly sized pieces so that they cook evenly. Granted, they won't all be exactly the same size, but if the pieces are relatively similar in size, smaller pieces won't burn while larger pieces are still uncooked.

I made these cauliflower bites with Frank's Red Hot Buffalo Sauce. It's one of my personal favorites! And it happens to be vegan friendly too. However, you can use any hot sauce or buffalo sauce you prefer. Try a flavored variety like this black truffle buffalo sauce for a whole new twist!

Skip dredging in flour

Don't want to use the flour mixture? Simply drizzle the cauliflower florets with a little oil and season with salt and pepper. Toast them until crispy and toss the florets in the sauce at the end of the roast and continue cooking as directed.

ingredients

  • ½ Cup flour
  • 1 teaspoon Garlic powder
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ Cup simple almond milk
  • 1 head cauliflower chopped into florets
  • ½ Cup hot sauce like Frank's buffalo sauce
  • 1 tablespoon Rapeseed oil or your oil of choice
  • 1 tablespoon Maple syrup or agave syrup

instructions

  • Preheat the oven to 425 ° C and line a baking sheet with parchment paper.

  • In a large bowl, stir together the flour, garlic powder, salt and paprika until well mixed. Stir in the almond milk until the batter is smooth.

  • Add the cauliflower florets to the mixture and toss them until evenly covered.

  • Spread the cauliflower on the prepared baking sheet and bake for 20 minutes or until the fork is tender, stirring gently.

  • While the cauliflower is cooking, mix the hot sauce, oil and maple syrup in a small bowl. Put aside.

  • As soon as the cauliflower is cooked, place in a large mixing bowl and mix with the prepared hot sauce

  • Use a slotted spoon to transfer the cauliflower back onto the baking sheet. Bake for 2-3 minutes until the sauce is bubbling. Serve hot.
