- Make the black beans: This involves sautéing onions and garlic and tossing them with canned black beans, salsa, and taco seasoning.
- Prepare corn salsa: This is as simple as tossing thawed corn with cojia or feta cheese, cilantro, and lime juice.
- Make the cream: Puree an avocado with plain yoghurt, lime juice and a pinch of salt.
- Put everything together: All that’s left to do is reheat the tortillas and stack them with the black beans, corn salsa, and avocado creme.

Make the corn salsa by mixing the ingredients in a small bowl.
Make the avocado crema by mashing the avocado in a small bowl, then tossing in the yogurt, lime juice, and salt.
Heat the oil in a large skillet over medium-high heat. Add the onion and sauté until translucent – about 3 minutes. Add the garlic and taco seasoning and cook for another minute.
Add the black beans and salsa and heat through, mashing the beans a little as you stir. Season with salt and pepper.
To serve the black bean tacos, warm the tortillas on the stovetop, in the microwave, or in the oven. Stack them high with the black beans, then top with some corn salsa and avocado creme.
