We Sri Lankans rarely make sweet syrups/sauces in our kitchen. But in European countries, women like to prepare sauces and sauces in their dishes. Sauces can be sweet or savory. Most of the time, sweet sauces are popular at Christmas because a lot of baking is done at this time. Sweet sauces are perfect for steamed puddings and baked pies.
Butter Scotch Syrup
This buttery scotch sauce is easy to make with minimal effort. This buttery scotch sauce is similar to caramel sauce. But here we use brown sugar where the traditional caramel sauce is made with white sugar.

total time 10 minutes
Medium sauce pan
- 50 grams butter
- 25 grams Packaged brown sugar
- 50 ml cream
- 1 TSP vanilla essence
- ⅛ TSP Salt
Put butter in a medium-sized skillet and let melt over low heat.
Add brown sugar, salt and vanilla essence and cook over low heat until sugar has melted.
After 2 minutes, add fresh cream and simmer over low heat, stirring, for another 2 minutes or until the sauce thickens slightly.
- The sauce will thicken as it cools. Don’t overcook it. Transfer and serve on a pudding such as ginger pudding.
