Chocolate Lava Cake

Hey you chocolate lover! If there was one dessert that celebrated chocolate in all its glory, this is it. It’s so fancy and something my kids want to order every time they see it on a menu at a restaurant! I’m talking about a nice crust on the outside and when you cut into it melty chocolate flows out oozing out. This moist cake has a perfect consistency.

According to legend, a chef once wanted to bake mini chocolate cakes. When he was ready to serve them, he realized they were undercooked in the center. In the end he served them anyway, and the dessert was called Chocolate Lava Cake. The guests enjoyed it! These are easy to make and delicious to eat! Try them. You might end up with a new favorite dessert for all your dinner parties!

Ingredients for chocolate lava cake

This ingredient list is pretty simple and you won’t believe how easy it is to make these homemade lava cakes. You can find the exact measurements on the recipe card at the end of the post.

  • eggs: In this recipe you use whole eggs and egg yolks. I like to make sure my eggs are at room temperature when I start mixing the batter.
  • Sugar: You don’t have to use too much sugar to make this recipe delicious and sweet!
  • Chocolate: For these desserts, you can use dark or milk chocolate. They both taste delicious, it’s just personal preference which you like better.
  • Butter: Use unsalted butter that is room temperature for this recipe.
  • vanilla extract: This brings out the sweet flavors in the cake.
  • cocoa powder: The cocoa powder enhances this chocolaty taste.
  • Flour: All-purpose flour works great for this recipe.

Let’s bake a cake!

These chocolate lava cakes are baked in a preheated oven at a higher temperature than you would normally use for cakes. And that’s because you want a crust to form on the outside and still want the center to remain soft and sticky.

  1. Prepare the molds: Butter the insides of four ramekins and dust with flour. Put aside.
  2. Melt butter and chocolatee: Melt the butter and chocolate in the microwave and allow to cool.
  3. whisk: Beat the yolks, eggs and sugar until fluffy.
  4. Add Vanilla: Add chocolate mixture and vanilla extract and mix well.
  5. Seven: Sift the cocoa powder and flour into the mixture and stir
  6. Divide: Divide the mixture between the four ramekins and place in the fridge for 30 minutes and up to 2 hours.
  7. Preheat oven: When ready to bake, preheat the oven to 425F.
  8. bake: Place the ramekins in a casserole dish. Pour hot water into bowl, reaching halfway up the ramekins. Bake for 15-18 minutes. Once baked, allow to cool for 10 minutes before inverting the ramekins onto a serving plate to serve.

What if I don’t have ramekins?

If you don’t have ramekins, that’s totally fine! You can use a muffin pan for these chocolate lava cakes instead. Grease the muffin tins before pouring in the batter. Bake them at 425 degrees for 8-10 minutes. When they’re done baking, scoop them out of the muffin tin with a spoon and place them upside down on a plate to serve.

Do this in advance

This Chocolate Lava Cake is a great dessert, especially for parties or get-togethers because it can be made ahead of time.

  • Refrigerate: You can prepare the dough and put it in the fridge for a couple of hours. When ready to serve, simply bake in the oven for 15-18 minutes and you’re good to go.
