The time has finally come and we can officially call it autumn. These perfect muffins are the best way to get the baking season off to a perfect start. They're not too crazy, not too boring, just the ideal spiced warm aroma and delicate taste that say it's time!

I love packing these into lunches or making them for snacks or getting a batch out of the oven in time for breakfast. You are just that good. Foamed with maple butter or cream cheese or eaten straight from the can, they are perfect.

Muffin ingredients:

Simple ingredients but amazing results.

  • Flour– All-purpose or unbleached bread flour
  • Baking soda– baking soda
  • Cinnamon, nutmeg, ginger, cloves– The best seasonings for pumpkin
  • salt– Makes up for the sweet
  • sugar– White sugar
  • Brown sugar– Adds color and rich flavor
  • Eggs-Large or extra large eggs.
  • pumpkin– Do not use a pie filling, use canned pumpkin
  • oil & Milk- Adds sensitive moisture

After a few steps you will have the perfect muffins.

  1. Dry- Mix and whisk together the flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt in a medium-sized bowl.
  2. Wet– In another medium bowl, mix the sugar, eggs, pumpkin, oil and milk together well.
  3. Mix– Combine the dry and wet ingredients and fold until combined.
  4. to bake– Almost completely fill the liner-lined muffin pan. Bake for 20-22 for 375 degrees.

This makes an excellent base for pillow-like, soft, tasty muffins, so it's very versatile.

  • ADD INS- Add chocolate chips, raisins, cranberries, walnuts, pecans, pumpkin seeds, oats, desiccated coconut, chopped fruit, or even crystallized ginger.
  • Spread– Spread these muffins with peanut butter, almond butter, or even pecan butter for an extra protein-rich snack.
  • Toppings These can be topped off with a crumble topping, cream cheese frosting, or a simple maple icing drizzle. You can get really creative.
  • Substitutions Swap the vegetable oil for coconut oil. Use whole wheat flour instead of white.

  1. Preheat the oven to 375 degrees. Line a 12 muffin pan with liner. In a medium bowl, add the flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. In another medium bowl, mix together the sugar, eggs, pumpkin, vegetable oil, and milk. Add the dry ingredients to the wet ingredients and beat them until they combine.

  2. Using a large cookie scoop, fill the muffin liner with the batter until it is almost full. Bake for 20-22 minutes or until the toothpick is clean.
