Grilled eggplant and tomato salad

Grilling veggies really seems to enhance their flavor, and in this recipe, the eggplant is no exception. This recipe makes a great side dish, a light lunch salad, or a delicious addition to an antipasti platter. If you can’t find the small, Italian aubergines used in this recipe, just look for the smallest ones you can find at your greengrocer. I’ve cooked this salad on both an outdoor grill and my stovetop grill with equally good results.

This is one of my favorite recipes for growing eggplant and tomatoes in my garden overnight during the summer heat. For best results, use ripe tomatoes, firm, unblemished eggplant, and quality balsamic vinegar and olive oil. You can also add some chopped spring onions and/or capers to this salad.

  • 6 small, firm eggplants (about 4-5 inches long)

  • 1/3 cup olive oil

  • 2 garlic cloves, chopped

  • 1 1/2 cups ripe cherry or grape tomatoes, halved

  • 3 tablespoons chopped fresh herb of choice (I used basil and mint in the photo)

  • 2 tablespoons balsamic vinegar

  • salt and pepper to taste


  1. Cut the eggplant into 1/2-inch rounds.
  2. Heat up the grill and brush lightly with some olive oil.
  3. Place the aubergine slices on the grill and brush the tops lightly with olive oil.
  4. Grill for about 4 minutes on each side, or until tender and golden brown.
  5. Place the cooked eggplants on a serving platter and continue cooking until fully cooked.
  6. Cut the eggplant into 2-inch pieces.
  7. Spread on eggplant, cherry tomatoes, garlic and herbs.
  8. Mix the remaining oil with the balsamic vinegar and drizzle over the dish.
  9. Season with salt and pepper and mix the mixture lightly, being careful not to break the aubergines.
  10. Serve warm or at room temperature.
